Xbox arcade games are mostly made with C#/XNA. Not sure about actual platform releases, think it's C#/DirectX, but I could be wrong.

As for PS3, C++/OpenGL is used often, though I've played a lot of games that were written in Lua, too.

Mobile platforms are primarily Java.

Realistically, games are written in whatever language the programmer chooses. But a lot of people prefer C++ for its low-level capabilities and its speed. (Which, on modern technology, is really fractional, and not at all noticeable by the end user if coded properly in other languages)
